Dried Bamboo shoot has a very different and delicious taste, that goes very well with Pork. Not only the taste, even the odour of dried bamboo shoot is appetising.
How Bamboo shoots are dried is a very different story, I will try to post an article on that, at a later date.
Well ! without spending much time. Here is the Recipe on How to make Pork with dried Bamboo shoot...Hot and spicy.
INGREDIENTS:
1: Pork : IKg. (1000 gms)
2: Dried Bamboo shoot: 20 gms. ( don't put much or it be sour)
3: Mashed Dry Red Chilly : 15 to 20 nos. ( depends how spicy you want)
4: Mashed Ginger : 3 tablespoon full
5: Salt to taste.
6: Anise Seed powdered : 3 teaspoon.
As you may have seen in my other videos, we don't use machine grinders, but a thick rounded wooden handle on a Aluminium bowl to mash the ginger and the red chilly.
You don't want the ginger and the red dry chilly to a paste. If you find it difficult to mash the chilly, keep the chilly soaked in hot water for 10 minutes. This will make it softer and easy to mash.
